Cookie Brownie Cupcakes with Chocolate Marshmallow Frosting

A few things that are on my mind today:
I know (and care) a tiny bit too much about the iCarly storylines. Is Sam still in love with Freddy? I want answers.
I really thought that at this point in my life, flying cars and/or robot maids would exist. They don’t. #disappointing
They should really add vitamins to Laffy Taffy. I would be the healthiest person in all the land.
Last night Bachelorette Ashley said “Bentley” approximately 1,198 times. Am I the only one who feels extremely awkward about that? I’m all “he hates you” and she’s all “there’s still a dot dot dot” and then my husband is all “stop talking to the tv, you crazy lady”.
I used to want an iPad. Then I decided that I didn’t really need an iPad. Now I’m obsessed with having one again. Which is a bummer because my “I don’t need one” phase hit right between Christmas and Mother’s Day. Sigh.
(If my husband reads this, I want a WHITE iPad, okay honey? Love you)
I love making frosting. It’s so easy and requires no baking or any of that other sciencey stuff that makes recipes hard to figure out. And the right frosting can turn an average dessert into something really special.
Like this Chocolate Marshmallow Frosting.

I mean, half cookie, half brownies are sort of cool on their own, but adding a frosting like this makes them the boss of coolness.
And by boss, I mean they are in the big corner office with a view of the city signing measly little checks for all the other sort of cool treats.
I just took that whole thing too far, didn’t I?
INGREDIENTS
Brownie batter (use homemade or mix, I used Duncan Hines Chewy Fudge prepared for cake-like brownies)
Regular sized tube of refrigerated chocolate chip cookie dough
Preheat oven to 350. Line 12 muffin tins with liners.
Slice cookie dough into 12 1/4 inch slices and place one in the bottom of each lined muffin tin. Don’t worry about any left-over cookie dough you might have–you will be eating it later.
Spoon brownie batter over the cookie dough, filling cups to about 2/3 full. Bake for about 20 minutes or until brownies are set. Remove from oven and cool on a cooking rack.
Frosting:
2 sticks salted butter, softened
1 teaspoon vanilla
2 Tablespoons milk
3 cups powdered sugar
1/4 cup cocoa powder
2 Tablespoons chocolate syrup
7 oz jar marshmallow creme (or fluff)
In the bowl of a mixer, beat butter, vanilla, and milk on medium-low speed until smooth and combined. Add powdered sugar and cocoa powder and beat on low until just combined. Add chocolate syrup and increase speed to high. Beat for 2 minutes until light and fluffy.
Using a spatula, fold in marshmallow creme, just until swirled throughout. You don’t want it to be completely mixed in. Pipe or frost on cookie brownies.
That’s it!! And easy peasy treat for a summer party.
Happy Tuesday!!

Thanks for visiting my blog! I realize you could be doing more important things with your time. Like watching the news or washing socks. I hope you stay awhile. Much more fun than socks, I promise.

I'm glad I'm not watching the Bachelorette this time around… I hear there's a bit of drama going on. These look scrumptious, and I love your owl mug too!
Anything with cookie and brownie in the same title has to be the BOMB! These looks super good. BTW got the pans and can't wait to make a cool layered cake! THANKS!
Oh my goodness, do these look good!! That frosting sounds like perfection! I'll have to add it to my mile long "to try" list!
I just need to eat a ton of celery before I stop by here hungry.
Delish!
Marshmallow cream frosting is my fave! I haven't done a chocolate version yet but I think I have to make your recipe this weekend.
I have everything I need in the pantry. Except cookie dough but that's okay, I am at the grocery store almost daily anyway. Or I could make the cookie dough.
Nah, too lazy!
I will let you know how they turn out!
so.
simple.
cookie AND brownie.
marshmallow chocolate frosting?
i think i'm gonna need to make these for the frosting alone.
and that mug is TOO cute. i was wondering. ;)
omg, bentley… bentley… bentley …bentley… bentley… bentley… bentley… bentley…
absolutely ridiculous that show, yet, cannot turn away.
awesomely cool bossy brownie cookie things. would you judge me if i ate the frosting without the baked treat? didn't think so :)
omg…these look amazing! Your swirly frosting is perfection….and I ? your owl mug!!
Oh, yum! I will be making these today while I wait for my Twinkies pan to arrive from Amazon :)
Ohmygosh stop it. I am going to be dreaming about these all afternoon, literally.
P.S. I also covet that owl mug. Adorable!
I'm normally not drawn to recipes that come out of a box, but this is sheer genius! I'm not even tempted to substitute homemade cookie dough or fiddle with anything. I'm going to the grocery store pronto and making this. The sheer fact that I own the exact same mug means I must make this. P.S. I LOVE TJMaxx…factoid: they also have them in Ireland, but they're called TKMaxx for some reason (I took a picture so I have proof), and yes, I stopped at one while on vacation. Complete dork you say? Why yes indeed.
I am seriously in love. YUM!
those look fabulous! i love the bachelorette, but agree with the whole Bentley thing, lol.
LOL – too funny! I agree about The Bachelorette – ugh, she is really so naive. And he's not thaaaaaaat cute ;)
I'm totally feelin you with the iCarly thing. Please keep me updated if you get any more info on the Freddie/Sam drama.
Bahaha
I think you are trying to kill me. I just showed this to everyone on vacation and they are all dying.
I think you are trying to kill me. I just showed this to everyone on vacation and they are all dying.
I think you are trying to kill me. I just showed this to everyone on vacation and they are all dying.
These look AHHHHHHHHHHmazing and I'm trying to come up with whatever reason I can to put them on my "healthy" food blog ;)
I am in the exact same boat! My husband got me and Ipad and I said I didn't need one! Yikes! Now it's all I want!
I would love to have one right now!
Would it be bad if I just made the frosting and ate that? :-) I love marshmallow fluff frosting and chocolate just makes it even better! And owl mug is making me want to run to TJMaxx like now!!! Thanks for all your fun baking!
I am definitely making these!!
i'm sooooo thankful i've never gotten into reality tv – like watching a train wreck . . . don't want to see it, but you can't take your eyes off it . . . and see? i can come here and catch up on all the comings and goings – you're the bestest Kristan!!
That owl mug is awesome…and so is that cupcake! Oh, that FROSTING! I could dive right in!!!
that frosting is insane, so jealous of your skills.
holy moly those look, and sound, so good!
I love love love that frosting recipe. I recently made my first marshmallow frosting but I think chocolate would be way better!
IPAD2's are on sale for 599$ at Target right now. The good ones. 3g and wifi…and 32 gs
Random thought from me. I think it is a teenie bit unfair {maybe I sould be voicing this complaint to GOD} that you make all this stuff and stay tiny ;)
Maybe one day God will change my genetics, just to keep things interesting!
That frosting is killing me! YUM!
oooooh my goodness, those look DELISH!
what do you do with all of your treats? do you give them away? or eat them (like i do)?
I've never actually seen the Bachelorette. Probably because I would shout things at the TV and frighten my husband.
As for your cookie brownie frosted things, I want. I want badly.
Ok, I don't watch the Bachelorette because she annoyed me on the Bachelor…. but I do watch iCarly with my teenage daughter and this is what she told me about the Sam/Freddie thing "There is going to be a special in August called "I Lost My Mind" and its all about the Sreddie relationship"
Good to have a teenager who knows that because I forgot about it…
The Cupcakes look delish and will be on my list to do this weekend…
I'm with you on robots- I think we were all teased by the Jetsons! I am in love with that chocolate marshmallow frosting!!!
My sister and I are 2 of your new readers. We LOVE, LOVE, LOVE your blog and your delicious and fun recipes. We pretty much feel like you are our new BFF. And we have been wondering: How do you know what our dreams are made of?
That is the most inviting icing I've ever seen. I want to take a bath in it.
YUM! I can just imagine the silky smooth texture of that frosting. Plus, any recipe with the word "brownie" sounds damn well good to me.
Ps. I love your owl mug! I want one?! But what on earth is TJ Max? I'll have to google that one.
Looks so yummy!
Tell your hubby this year it's Sadie Hawkins and Father's day is now Mother's day :) ok maybe it's a stretch, but still worth a try!
I really love your recipes!! They are the best!!
OK…the frosting looks amazing but do you use a pastry tip (as opposed to an icing tip) to get those huge swirls? What number? Thanks for the amazing recipe. So easy yet impressive!
Lori from Port Perry, Canada
OMG – these looks amazing! And I laughed out loud at your reference to iCarly. you go girl.
Oh my gosh!! Sam is in love with Freddy?! Isn't he in love with Carly?! I haven't watched it in a really long time!!
By the way, the cupcakes look so good!!

What a fun post! I purchased a white iPad for myself….I promise you won't regret it!
I'm afraid I don't watch the Bachelorette, but my sister does and keeps me apprised of the drama.
….let see…what else?…Oh! Your cupcakes look divine!
You crack me up! I just found your blog through Glorious Treats. I can't wait to read more from you and try these cookie/brownie cupcakes. And I love the owl!
I have to try that frosting! I make brownie cookies but in a flat pan, we call them Brookies(brownie cookies) in my house. But I will def make them as cupcakes now. Does your hubby watch sportscenter at all? My husband conastntly yells at the tv with that on. so in my mind the bachelorette is the ladies version of sports, we watch the "plays" ,"bad calls" etc and MUST speak up to show everyone else we are smarter than the ones in the "game"
I LOVE that owl mug! So glad you stated where it was from because I was going to have to ask! TOO cute! These are awesome cupcakes! Totally Boss! And I mean that in a synonym for cool kinda of way ;o)
I adore your blog! You make me laugh EVERY day
These look amazing… Can you please deliver a dozen to my house? :)
I made these last night for our dinner guests. I used homemade cookie dough and cake mix to make the brownies cause it's what I had and it was a huge hit. I then ate one for breakfast… Um I mean I umm… Ok I admit it. I dreamnt about them and had to have one first thing. Thanks for posting.
For your information, I was wondering! Thanks! I live literally a three minute walk from TJ Maxx. And I desperately need a hot cocoa mug. I think you helped me find one!
could you do a make over on the frosting? I always have everything but the chocolate syrup and I hate to buy something we wouldn't use… but the cupcake/brownies… a real must make for my "stitch and b****" group!
I'm in love with the sound of that frosting! And I haven't caught up on the bachelorette yet – I'm a week behind (saving it for when the husband is out of town – perfect to watch when I'm home alone!) – but I'm with you on the talking to the tv thing :)
These look amazing!
Get an iPad, you'll love it. I did the same as you, ignored them, wanted them, ignored them then I got an iPad 2. Love it :D
These look yummy!
Awww… they look super duper luper huper adorable :DD
Totally with you on the dopey Ashley thing. And I also scream at the TV! I am on again off again with my iPad obsession – especially now that it has a camera, although really awkward to use! Rambling….. LOVE the Cupcakes!
I totally love these, especially that frosting! Man…you must really hate my thighs. ;-)
First off, I need to go to TJ Maxx asap and get an owl mug. I love owls!!
Secondly, iCarly is amazing – did you catch the iCarly/Victorious movie?! Ahhh! Saved on my DVR to watch whenever I want. And so my husband can see it. Shh! He watches iCarly with me and he totally likes it.
Thirdly, *drool*
That is all :)
You are my hero!
Should I admit that when I read "boss" I immediately thought of Mario Brothers and Bowser? I'm SUCH a geek! Loving this frosting, babe. There's a reason I don't watch most reality tv shows. Except Teen Mom and 16 and Pregnant. I can't seem to look away from those train wrecks for love nor money.
Made these adn I'm taking them to a baby shower tonight. This is the third recipe I've used by you, and they all have turned out amazingly. Thanks so much!!!!!
Quite possible the best icing ever. I didn't have chocolate syrup, so I used a chocolate marshmallow dip.
Thanks for all the inspiration!
I just came across your blog and i think i love you .. i'll be trying out this cookie brownie marshmallow yummyness next monday before the bachelorette. those are three of my husband's favorite things. (cookies, brownies and fluff .. not the bachelorette!) maybe these will make watching with me a little (and by a little, i mean A LOT) more bearable! thanks!
These look great! I wanted to let you know that I featured these in my "What I Bookmarked This Week" post – stop by and see!
Is there anything particular that made your icing stiff? Mine was a runny mess!
My frosting wasn’t stiff enough to stay on the c upcakes. I ended up adding tons more powdered sugar to make it able to be piped on and even then I refrigerated to keep them just in case. So all the extra powdered sugar made the frosting almost unbearably sweet even for this sweet tooth. I don’t think I did anything wrong. Any pointers?
So I made these for my work pot luck for Friday. I tried one with my boyfriend tonight. A-MAZING! Definitely have to wait until they are cooled. My last batch that I was rushing got melted icing. Goopy marshmallow all over but so good to clean up.
Thank so much. I’m so glad I stumbled on your blog!
Three things:
1. I found your blog about a month ago and have enjoyed going back and looking at all your posts, and these cupcakes look amazing! Thanks for your posts and pretty pictures.
2. Ashley was annoying on the Bachelor so I don’t know how I thought it would be any different on the Bachelorette. However, it is different because there’s Bentley. Seriously.
3. You do need an iPad. Great for kid games and reading. recipes, shopping, etc. Good luck on your quest to get one.

Hey, great recipe! I just found it on google, searching for a marshmallow frosting idea… I’m making cupcakes for my Husband’s Birthday at the Waterslides (no he’s not 5, haha) – do you think this frosting would hold up in the heat, or would it be meltable because of the butter? I wonder if using shortening instead might help… Do you have any tips for me?
O.M.G, these look amazing. I just found you via Blondies Cakes and I am adding you to my reader…
Thank you!! :)
No joke, made these today for my small group…HUGE hit. The combination of flavors were a big hit as was the amazing frosting (that sort of reminds me of french silk pie!). I doubled the recipe and ended up with way more frosting than I knew what to do with (other than eat off the spatula, continuously) but thought I should let you know I tried and it was a huge success, so thank you!

Made these today for my son’s 3rd birthday party because he said he wanted chocolate cupcakes and what could be better and more chocolatey than a brownie cookie cupcake with chocolate marshmallow frosting. They turned out perfect! I loved them and so did my son. I will be making these again for sure. Yummy!
