Cookie Brownie Cupcakes with Chocolate Marshmallow Frosting

A few things that are on my mind today:

I know (and care) a tiny bit too much about the iCarly storylines. Is Sam still in love with Freddy? I want answers.

I really thought that at this point in my life, flying cars and/or robot maids would exist. They don’t. #disappointing

They should really add vitamins to Laffy Taffy.  I would be the healthiest person in all the land.


Last night Bachelorette Ashley said “Bentley” approximately 1,198 times. Am I the only one who feels extremely awkward about that? I’m all “he hates you” and she’s all “there’s still a dot dot dot” and then my husband is all “stop talking to the tv, you crazy lady”.


I used to want an iPad. Then I decided that I didn’t really need an iPad. Now I’m obsessed with having one again. Which is a bummer because my “I don’t need one” phase hit right between Christmas and Mother’s Day. Sigh.


(If my husband reads this, I want a WHITE iPad, okay honey? Love you)

I love making frosting. It’s so easy and requires no baking or any of that other sciencey stuff that makes recipes hard to figure out.  And the right frosting can turn an average dessert into something really special.


Like this Chocolate Marshmallow Frosting.



I mean, half cookie, half brownies are sort of cool on their own, but adding a frosting like this makes them the boss of coolness.

And by boss, I mean they are in the big corner office with a view of the city signing measly little checks for all the other sort of cool treats.

I just took that whole thing too far, didn’t I?

INGREDIENTS
Brownie batter (use homemade or mix, I used Duncan Hines Chewy Fudge prepared for cake-like brownies)
Regular sized tube of refrigerated chocolate chip cookie dough

Preheat oven to 350. Line 12 muffin tins with liners.

Slice cookie dough into 12 1/4 inch slices and place one in the bottom of each lined muffin tin. Don’t worry about any left-over cookie dough you might have–you will be eating it later.

Spoon brownie batter over the cookie dough, filling cups to about 2/3 full. Bake for about 20 minutes or until brownies are set. Remove from oven and cool on a cooking rack.


Frosting:
2 sticks salted butter, softened
1 teaspoon vanilla
2 Tablespoons milk
3 cups powdered sugar
1/4 cup cocoa powder
2 Tablespoons chocolate syrup
7 oz jar marshmallow creme (or fluff)


In the bowl of a mixer, beat butter, vanilla, and milk on medium-low speed until smooth and combined. Add powdered sugar and cocoa powder and beat on low until just combined. Add chocolate syrup and increase speed to high. Beat for 2 minutes until light and fluffy.


Using a spatula, fold in marshmallow creme, just until swirled throughout. You don’t want it to be completely mixed in. Pipe or frost on cookie brownies.


That’s it!! And easy peasy treat for a summer party.

    Marshmallow cream frosting is my fave! I haven't done a chocolate version yet but I think I have to make your recipe this weekend.

    I have everything I need in the pantry. Except cookie dough but that's okay, I am at the grocery store almost daily anyway. Or I could make the cookie dough.

    Nah, too lazy!

    I'm normally not drawn to recipes that come out of a box, but this is sheer genius! I'm not even tempted to substitute homemade cookie dough or fiddle with anything. I'm going to the grocery store pronto and making this. The sheer fact that I own the exact same mug means I must make this. P.S. I LOVE TJMaxx…factoid: they also have them in Ireland, but they're called TKMaxx for some reason (I took a picture so I have proof), and yes, I stopped at one while on vacation. Complete dork you say? Why yes indeed.

    Ok, I don't watch the Bachelorette because she annoyed me on the Bachelor…. but I do watch iCarly with my teenage daughter and this is what she told me about the Sam/Freddie thing "There is going to be a special in August called "I Lost My Mind" and its all about the Sreddie relationship"

    Good to have a teenager who knows that because I forgot about it…

    The Cupcakes look delish and will be on my list to do this weekend…

    I have to try that frosting! I make brownie cookies but in a flat pan, we call them Brookies(brownie cookies) in my house. But I will def make them as cupcakes now. Does your hubby watch sportscenter at all? My husband conastntly yells at the tv with that on. so in my mind the bachelorette is the ladies version of sports, we watch the "plays" ,"bad calls" etc and MUST speak up to show everyone else we are smarter than the ones in the "game"

    I made these last night for our dinner guests. I used homemade cookie dough and cake mix to make the brownies cause it's what I had and it was a huge hit. I then ate one for breakfast… Um I mean I umm… Ok I admit it. I dreamnt about them and had to have one first thing. Thanks for posting.

    My frosting wasn’t stiff enough to stay on the c upcakes. I ended up adding tons more powdered sugar to make it able to be piped on and even then I refrigerated to keep them just in case. So all the extra powdered sugar made the frosting almost unbearably sweet even for this sweet tooth. I don’t think I did anything wrong. Any pointers?

    So I made these for my work pot luck for Friday. I tried one with my boyfriend tonight. A-MAZING! Definitely have to wait until they are cooled. My last batch that I was rushing got melted icing. Goopy marshmallow all over but so good to clean up.

    Hey, great recipe! I just found it on google, searching for a marshmallow frosting idea… I’m making cupcakes for my Husband’s Birthday at the Waterslides (no he’s not 5, haha) – do you think this frosting would hold up in the heat, or would it be meltable because of the butter? I wonder if using shortening instead might help… Do you have any tips for me?

    No joke, made these today for my small group…HUGE hit. The combination of flavors were a big hit as was the amazing frosting (that sort of reminds me of french silk pie!). I doubled the recipe and ended up with way more frosting than I knew what to do with (other than eat off the spatula, continuously) but thought I should let you know I tried and it was a huge success, so thank you!

    Made these today for my son’s 3rd birthday party because he said he wanted chocolate cupcakes and what could be better and more chocolatey than a brownie cookie cupcake with chocolate marshmallow frosting.
