Mississippi Mud Cupcakes
I am not a big chocolate person, but this week, I definitely need some chocolate in my life.
I mean, most problems can usually be solved with some Sour Patch Kids or Chewy Sprees, but not this week. Thunderstorms not only demolished my yard, trampoline and several trees but even WORSE, cut off the end of last night’s Bachelorette. My baby boy is graduating kindergarten. I haven’t had good hair in over a week due to humidity and I am pretty sure that the cereal ghost is still hanging around having a good laugh at my expense.
And of course, all that end of the world nonsense over the weekend didn’t help, although if we are being honest, I wasn’t worried. We all know that God wouldn’t let the world end before any of us had a chance to go see Breaking Dawn in theatres.
Duh.
Anyways, yesterday I found myself drowning my sorrows in a can of chocolate frosting.
As in…I was eating it with a giant serving spoon.
It’s a bad week, okay? I’m out of sorts.
So I decided that I needed to get myself together and make some chocolate cupcakes. With chocolate frosting.
Because that is what a normal person does.
I think.
(cake batter from TidyMom’s “tastes like homemade” cake mix recipe)

INGREDIENTS
Box chocolate cake mix (I used Duncan Hines Dark Chocolate Fudge)
1 stick butter, melted
3 eggs
1 cup water
2 cans chocolate frosting (I used Duncan Hines Classic Chocolate)
Chopped pecans (about a cup)
Bag mini marshmallows
Preheat oven to 350 and line 24 muffin cups with liners.
In the bowl of a mixer, combine cake mix, melted butter, eggs and water. Beat on low for one minute. Scrape down the sides of the bowl and increase speed to high. Beat for one minute.
Fill muffin cups about 1/3 full. Place a spoonful of chocolate frosting in the center of the batter and top with 4 or 5 mini marshmallows. Spoon cake batter over the frosting/marshmallows to cover completely. Cups SHOULD NOT be more than 1/2-2/3 of the way full. Bake for about 15 minutes or until top springs back when lightly touched.
Some of the cupcakes may sink in just a bit in the middle. That is fine, you will be covering them with frosting.
Frosting:
2 sticks butter, softened slightly
1 teaspoon vanilla
3 Tablespoons heavy cream
2 cups powdered sugar
1/4 cup cocoa powder
1/4 cup chocolate syrup
In the bowl of a mixer, beat butter, cream, and vanilla on medium speed until smooth and blended. Add powdered sugar and cocoa powder and beat on low until just mixed. Pour in chocolate syrup and beat on high for 2 minutes.
Frost cupcakes and top with marshmallows. Place leftover canned chocolate frosting in the microwave and microwave on high, stirring every 5 seconds until pourable, but not too runny. Spoon frosting over cupcakes and top with chopped pecans.
These cupcakes are chocolatey, messy and probably really fattening.
Perfect for a bad day.

You are absolutely right. No just and loving God would end the world before we get to see Bella and Edward in all their torn feather pillow glory.
I think we should make a date to see Breaking Dawn together somehow, and then eat these incredibly decadent cupcakes afterwards. Because come on. Edward AND Mississippi Mud Pie cupcakes on the same day? Then who cares if the rapture comes or not?

you eat chocolate frosting directly out of the can? That is SO something I would never even think of doing…ever, like never ever ever.
ok..i am a total liar. which is probably why I am still on earth and not sucked up into "rapture"…but glad for it because now I have a reason to make these delicious looking cupcakes. *in 21 days* ;)

OK confession time. I keep an emergency can of chocolate frosting in the fridge at all times because, well, um have you seen the name of my blog? These look amazing.
I want to reach in with my fingers and just grab all the frosting off of that. It looks so sinfully thick and creamy.

Anytime my cupcakes fizzle out I just think..cool, more frosting will fix 'er right up! Have great week.
That storm hit us so fast last night (here in Ohio). Our poor patio umbrella got scooped up like a Wizard of Oz moment…watching it fly across the yard! Fortunately, that was the least of our damage so we can't complain. At all.
Those cupcakes look amazing. I too would rather have chewy spree (do you have any), or Skittles, my absolute fav.

These sound delicious! Also, I'm pretty sure God wouldn't let the world end before the last Harry Potter movie. I know I'm the worst fan ever because I've never read any of the books, but still…I spent a lot of time watching those movies, and I would have been pretty mad if I didn't get to see how it ends!
chocolate will help you to drive out depression so it is good if you eat chocolate or something sweet if you feel low. You also used pecan, this nut is good for the brain and it will also lower cholesterol. I like your recipe and I will keep this on my diary.

Eating these could definitely confuse though thinking they missed the rapture. One would surely feel that they have indeed died and gone to heaven.
