Homemade Fudge Rounds
I don’t really understand people who say they wish they could be a kid again.
Seriously, being a kid is not that great.
Being an adult however, is completely awesome.
I mean, I get to open a new box of cereal before the other boxes are finished, wear however much eye makeup I want, and eat Skittles for lunch.
Sounds good to me.
The only real problem I have with being an adult is the lack of prizes and incentives.
My son comes home from school every day with a smiley face and a good behavior prize at the end of the week from the treasure chest.
And I remember that when I was a kid, the teachers at my elementary school would randomly pass out gold sheriff stars to kids they caught behaving good.
So sometimes when I do something really adultish like make an important phone call about a doctor appointment, pay bills AND have the stamps on hand to mail them off immediately, AND plan dinner that includes several side dishes and rolls, I sort of find myself looking around for someone with a cute sticker or a star to give me or something.
Oooh!! Or one of those scratch and sniff stickers, you know the ones that smelled like chocolate or whatever?
Anyways, I’m thinking that I might start my own business where I just patrol the land looking for adults doing good adult things and give them stickers or sheriff stars.
Or candy.
And I’m not exactly sure when this business of mine will take off, or where my patrols will take me, so you should all probably do super adultish things just in case I make it your way.
Do any of you know where to buy those chocolate stickers?
Anyways.
Another good thing about being an adult is that I don’t have to wait until after school to eat a Little Debbie. I can have them whenever I want!
I’m partial to Fudge Rounds, so I decided to make my own.
**cookie recipe from Bake or Break

INGREDIENTS
1 1/4 cup salted butter, softened
2 cups sugar
2 eggs
2 teaspoons vanilla
2 cups flour
3/4 cup cocoa
1 teaspoon baking soda
Heat oven to 350.
In the bowl of a mixer, cream butter and sugar on medium until fluffy. Add the eggs one at a time mixing after each addition. Mix in vanilla.
In a medium bowl, combine flour and baking soda. Add slowly to the butter/sugar mixture in the mixing bowl. Beat until combined.
Drop spoonfuls on ungreased cookie sheets and bake for 7-9 minutes. Remove baking sheets to cooling racks and remove cookies after a few minutes to continue cooling.
While cookies cool, make your filling.
FILLING
1/2 cup shortening
1/2 cup salted butter, softened
1 teaspoon vanilla
1/4 cup cocoa powder
3 cups powdered sugar
4 tablespoons warm water
In the bowl of a mixer, beat the shortening and butter on medium speed until smooth and combined. Beat in vanilla. Add cocoa powder and powdered sugar and beat on low until just combined. Add water and beat on medium high for about 2 minutes or until light and fluffy.
Once cookies have cooled, pipe or spread filling on the flat side of half of them. Gently press another cookie on top of the filling.
For the stripes, microwave 1/2 cup milk chocolate chips and 1 teaspoon vegetable oil in a microwave safe bowl, stirring every 15 seconds until smooth. Drizzle or pipe on top of Fudge Rounds. Refrigerate until chocolate is set.
I recommend eating a whole big stack of these right before dinner.
You’re an adult so….that’s totally allowed, right?

I loved scratch and sniff stickers. There was a Mello Smello wearhouse near where I grew up. There was one kid at my school who's mom worked there, and he always had the neatest stickers. I don't know why you don't see them anymore. They were the coolest things ever. I saw some of those stickers on Ebay but they were crazy expensive for a sticker!

I always think it's weird when my kids say they can't wait to be grown up. Pahleeze, they aren't paying attention, are they?!
I often give myself "prizes" for doing something well, getting things done, etc. Like I buy a new shirt or treat myself to an ice cream cone…I think it helps keep me positive:)
I miss how even the small things make you so excited as a kid. Yummy cookies, though, I could use those about now!!
I know what you mean about needing a sticker, I want my gold stars when I do a good job!!!

I used to be the teachers pet at school, and just to get the other kids to behave, the teacher would randomly give me a whole sheet of stickers for not doing anything. And he would get me happy meals. First grade was pretty awesome.
I was just thinking yesterday about how much I miss being a kid! And now I miss it more – I wish somebody would hand me a few scratch and sniff stickers! :) I really enjoyed reading this post. It made me smile. And then drool. The fudge rounds look SO good. I would happily take one of those instead of those stickers… Thanks for sharing :)
Ooo… you have opened the floodgate of little star memories for me. I don't remember getting a prize at the end of the week, but I do remember charts full of stars next to all the kids' names – gold being the most coveted.
Oh and the scratch and sniff stickers – I loved them, especially the strawberry scented ones. Fruit scented magic markers were another fun item. I don't think I ever had my own, but I always thought the kids who had them were pretty lucky.
I totally hate being an adult! True story. I also grew up as a kid hating all those little debbie snacks and stuff like that. weird, right? But the only ones I liked were the fudge rounds! YUM!

Okay, wow, you are a life saver! I LOVE Fudge Rounds, but I can never justify buying them because we always have something I made still hanging around. But now…these will just be another one of my baking adventures!

yay! I can't wait to make these! And I always wants rewards for everything. If I do something I think is spectacular I can't help but say to my husband "did you notice how clean the house was today?" or "don't you think dinner was good?" haha in essence saying "tell me I did a good job please" :)

Ahaha, I would LOVE it if someone randomly came up to me and gave me a sticker for being a good adult! Especially if I was like, at the dentist or something. Although that might be kind of awkward if they followed me to the dentist. But still, chocolate-scented sticker? I'm so there.

I had a friend who would make origami swans and wander around town giving them to people. He also made the tips he left at restaurants into origami forms. People seemed to love it. Although I think baked goods are a far better treat.

What a great post! I totally agree about being adultish. Reminds me of when we were in Italy and my husband wanted gelato before supper time and we totally had a gelato supper because we were Adults!! Thanks for the smile!

I did notice that in the directions for the cookies you left out the part about adding the cocoa powder to the dry ingredients.
When I was in elementary school, I loved stickers a lot. I used to have collections of all different kinds. My teachers didn't hand them out a lot, but I found that if I went and talked to the school counselor, I would get a sticker. I went to the counselor all the time after I saw her great sticker collection.
Oh my gosh! I use to get Little Debbie fudge rounds packed in my lunch in grade school! They were my favorite treat along with cosmic brownies! Can't wait to try these.

Fudge rounds are my weakness…my fiance knows this, so everytime I have a bad day, he surprises me with one. I made these and now, I don't think I will ever buy Little Debbie again!
