Guest Post: Mini S’mores Pies

My guest post for today comes from one of my very best blog friends, Shelly from Cookies and Cups.

Shelly started reading my blog in the very beginning, and she always left me the sweetest and funniest comments, which was awesome because…well…hardly anyone else was reading or commenting. 

Unless you count the crickets that were chirping between blog posts…

Over the past year, I have really gotten to know Shelly and it turns out that we have TONS in common–sometimes we even bake the almost identical thing without even discussing it. Instead of ESP, I think we have BSP (get it? get it? no?).

And today I finally get to meet Shelly in REAL LIFE!! She is making the trip from New Jersey to New York City to have lunch with my husband and I and I cannot wait to meet her.

Between the two of us, we are likely to scare my husband off. And half of New York.

I hope you all love her as much as I do!!

 
I am so excited to be posting over here today!  I love Kristan’s site because I feel like we both share a love for sweets, reality tv and sparkly stuff!  I so wish she lived closer to me so we could hang out, eat fruit roll-ups and gossip.

In the meantime I will share a fun, easy, no-bake recipe that is perfect for the upcoming S’more months.

My husband is not a fan of the s’more…mainly because he isn’t a marshmallow lover.
Yes, we have been able to overcome this hurdle in our marriage and remain happy, but I am still trying to convert him.

Now, I said these are no-bake…that’s mostly true.
I did turn on my broiler at the end to toast the marshmallows on top.  If you have one of those handy torches you won’t have to worry about the broiler, but I have had some scary incidents with fire and torches that left me with singed eyebrows, so I tend to stay away from flame throwing devices.  But it’s completely up to you!
No-Bake Mini S’more Pies
(makes 6 pies)
1 pkg. Keebler “Ready Crust” Mini Graham Cracker Pie Crusts 
2 Hershey’s Chocolate Bars
2 cups mini marshmallows
1 small (depending on brand this is generally 3.4 oz) package Chocolate Pudding (not instant)
2 cups milk (for the pudding)
6 Tbsp. Marshmallow Fluff
2 Tbsp mini chocolate chips for garnish ~ optional
Begin by spreading 1 Tbsp of Marshmallow Fluff in each of the mini crusts.
 Do this gently so the crusts don’t break.
 Then place 2 squares of Hershey’s chocolate on the Fluff.
Now prepare your box of chocolate pudding using the 2 cups of milk according to package directions.
While the pudding is cooking preheat your broiler.
When the pudding is done cooking (still hot) pour 1/4 cup onto each of the prepared crusts.
You will have some leftover pudding…enough to double the number of pies if you choose.
Now top the pies with a small handful of mini marshmallows, about 1/3 cup each.
When pies are ready place them on a baking sheet and put under the preheated broiler for 30 seconds.
The marshmallows will begin to toast.  Watch closely because they will burn fast!
 If you have a fancy torch you can lightly toast you marshmallows using that.
Garnish with chocolate chips if you wish.
These can be served warm or cold.
If you are serving cold place in a sealed container until ready to serve.

    I'm still trying to convert my husband, too! Both he and my son are no-go's on marshmallows. And that's why we don't camp, because I'm a no-go on camping without s'mores. Maybe these pies will convince them. :)

    My broiler and I haven't been speaking to each other for about 3 years so I'm going to have to get out the torch. It's a touchy subject but it has to do with garlic bread. And I was pregnant so yeah I blame it on the hormones but still – we're not speaking. These look like so much fun!

    I just made these tonight for dessert and they were so yummy and everyone loved them. I wasn't going to put the pudding in because I didn't have time to stand at the stove to make it, but I found microwave directions on the box and made the pudding in the microwave…easy peasy! This is definitely a keeper. Thanks for sharing!
