Baby Shower Mints

Butter Mints

I have said many times that my favorite thing about blogging is the friends I have made in the process.

One such friend is Amanda from i am baker and i am mommy.

Most, if not all of you, are probably familiar with Amanda’s beautiful blogs, where she shares not only the most gorgeous cakes and cookies, but her experiences as a wife, mother, and child of God.

But what you may not know, is how good she also is at being a friend.

She is kind, loyal, a good listener, and always ready to offer advice, a few words of motivation, or a prayer.


How she is able to stay so upbeat and patient while raising three small kids, running a household, baking beautiful cakes and maintaining TWO blogs is beyond me. 


Oh yeah–and for the past 9 months, she has done it all while being pregnant.


To say that I adore that woman would be an understatement.


Unfortunately, I don’t live close enough to Amanda to do the things  I’d do for any other friend who was having a baby. Throw a baby shower. Come over and help get her house in order. Take her little ones out for ice cream so she could sit down and put her feet up.


So I’m doing the best I can do. I’m helping throw a SURPRISE virtual baby shower.

SURPRISE, AMANDA!!

I’m so excited about the new life you’re bringing into the world and I can’t wait to meet him!! 


I know cupcakes seemed like an obvious choice for me, but I decided to make one of MY favorite baby shower treats–those super soft melt-in-your-mouth mints.

Did you know that it’s totally easy to make your own baby shower mints? Plus, you can color them to match the shower decorations and cut into any shape you want.


Or just make them for yourself and eat the whole bowl. You know you’ve always wanted to do that anyways.

INGREDIENTS 
4 oz (1/2 block) cream cheese, softened
1 TBS butter, softened
4 cups powdered sugar
4 drops peppermint oil

In the bowl of an electric mixer, combine the cream cheese, butter, and powdered sugar and mix on low speed until just combined. Add the peppermint oil and beat on medium until well mixed. Candy will be sticky.


Turn candy out onto a board sprinkled generously with powdered sugar. Divide and color as desired. To get the color fully combined, you will need to knead it in.


For traditionally shaped mints, roll sections of candy into long ropes, cutting into 1/2 inch pieces. To cut your own shapes, pat the candy flat on your powdered sugar covered board and cut with a small cookie cutter.


Place mints in the refrigerator to harden.

Since Amanda didn’t have any specific nursery colors picked out, we chose teal, orange and white for the baby shower color scheme.

This surprise shower has been in the works for about a month now, and lots of my other sweet blogging friends are participating.

    the mints look terrific.
    one measurement question: you call for a 4oz or block of cream cheese. when i purchase cream cheese it typically comes in 8oz blocks (although i've seen mini blocks). Do you really mean 4oz or 8oz? thanks and looking forward to making these.
