Peanut Butter Sandwich Cookies

It has been brought to my attention that there are quite a few of you who don’t participate in Valentines Day.

It’s too…”commercial”.

Well……listen.  We’re running out of time, so I’m here in a last ditch effort to change your mind.

That’s right–I’m saving Valentines Day.

You can thank me later, Cupid. I like chocolates.

Because I read your comments, emails, tweets, and Facebook posts daily (I have no life other than stalking my own blog) it is quite apparent to me that I am blessed with intelligent readers.  So we are going to approach this situation in a very straightforward manner–by writing a list. 

Isn’t that what smart people do?

 

Good Things About Valentines Day
Love 
Love is good, right? Who votes against love? Gargamel, Spencer Pratt, and spammers, that’s who. 
  
Chocolates
As if chocolates aren’t enough to tickle your fancy, odds are that if it’s Valentines Day, they’re coming to ya in a heart shaped box. 
Heart + Chocolate = Love and Joy 
Hugs
Even if you are currently unattached, Valentines Day is a good excuse to get your hug on. A good friend? A neighbor? A cute good friend/neighbor who is also unattached? Hugs are warm and cozy. Just don’t be one of those long huggers. Seriously–awkward.
Flowers
Know what I love about flowers? They say “I love you enough to spend a ridiculous amount of money on something that will die in a week, and probably sit on the dining room table a month after that, dropping brown petals and making a mess everywhere”. Doesn’t the romantic-ness of that just turn you to mush?
Quality Time 
What do you wanna do? I don’t know. Wanna go out? Nah…everywhere will be too busy. Plus, it’s a school night. Okay, well…what are you making for dinner? You want me to COOK?! It’s Valentine’s Day!! But we have to eat and you don’t want to go out….fine, I’ll cook….  SURE, because you TOTALLY know your way around the kitchen,  Mr. ICANBARELYPOURCEREAL!!!
Okay…maybe not so much quality. But still–you’re together, right?
Candlelight Dinners
I’ve paid big money for cosmetics promising to make my skin looked bathed in candlelight. Well guess what? Real candles are only $.99. Romantic, a bargain, and your skin will look fabulous.
Cheesy Valentine’s Cards
Sometimes that gorilla with his finger up his nose says it better than I can. And I’m okay with that.
Sooooo,……to wrap things up, we’ve determined that celebrating Valentines Day makes your skin look good, leaves your dining room a mess, and possibly results in awkward hugs/cheesy gorilla nose-picking greeting cards.
I’m going to go ahead and assume that I’ve won you over.
If you are looking for a fabulous last minute treat to whip up for your loved ones, I suggest these cookies. I saw a picture of them on my friend Rhaina’s Facebook page last week and knew I had to try them.
So I internet harassed her until she gave me the recipe.

INGREDIENTS

1 cup butter-flavored shortening
1 cup peanut butter
1 cup granulated sugar
1 cup packed brown sugar
3 eggs
1 teaspoon vanilla extract
3 cups all-purpose flour
2 teaspoons baking soda
1/4 teaspoon salt
Preheat oven to 375.

In the bowl of a stand mixer, cream shortening, peanut butter, and both sugars on medium speed until light and fluffy. Add eggs, one at a time, beating well after each addition. Add vanilla and mix until blended. 

In a medium bowl, combine the flour, baking soda, and salt. Add slowly to the butter mixture and mix on medium speed until completely combined.
Shape into 1 inch balls and place 2 inches apart on ungreased baking sheets. Flatten to about 1/4 inch thickness with a fork (right after this step, I cut my cookies with a small heart cookie cutter and threw excess cookie dough back in the bowl). Sprinkle cookies with sugar and bake for 7-8 minutes or until edges turn golden. Remove to wire racks to cool.


I had a bunch of Peanut Butter Marshmallow Frostingleftover from my Captain Crunch Cupcakes, so that’s what I used to fill my cookies. Just spread some on the flat side of a cookie, gently press another cookie on top, and sprinkle the edges with festive sprinkles.

If you aren’t up for making your own frosting, I think canned chocolate frosting would be excellent with these.

    I was just complaining to my hubby that he has turned me into not liking any holiday. Birthdays (Except for our kids) and other holidays are just another day to him.
    I just want to be swept off my feet which I know wont happen. Tear* Instead I'll bake and eat.

    Sorry love, still not celebrating… Of course I have a good reason. Its not that its too "commercial". To me you should celebrate your love every single day. And besides, arent spontanius gifts mode special then ones planned?

    Funny, I don't care about receiving a present or doing anything special for Valentines Day, but if my husband forgot Mother's Day… Holy Moly! he'd have to sleep with one eye open. ;)

    I love Valentine's Day and just because I'm not a romantic, I do appreciate good chocolate and fun cards. Otherwise I wouldn't have just made 6 dozen mini cupcakes, your Fudge Brownie Cupcakes and White Chocolate Icing recipe at that! Those cookies look very yummy.

    Ahahahaha Spencer Pratt! If ever someone had an appropriate surname, it was that dude. These are so adorable. I am sad that my guy is anti-peanut butter. I would love it if he made me these, but he won't, because he is also anti-peanut butter breath. Sadface.

    OK, OK, you've found me out. I'll admit, I don't get into Valentine's. Not at all. Chalk it up to years of restaurant life where V-day is THE worst night in the kitchen. The resto over books, people are picky, take too long, and EVERY table is a deuce, making for chaos on the line. I hated that night every year.

    Whew. Guess it's time to let it go, eh? (I said 'eh' just for your benefit.)

    holy moly i totally laughed out loud. we are one of those people who don't celebrate because it is too commercial (and i really don't even like peanut butter cookies…) but i think i might make these tonight for my husband for valentine's day just because you are so darn funny! :) gargamel, spencer pratt and spammers… *snort* still laughing at that.

    I like Valentines Day. I don’t buy in to the commercial side of it but see it as a day to celebrate the loved ones in your life, just as you celebrate Mothers on Mothers day and Fathers on Fathers Day. I like making or getting a little treat for my hubby and now for my son too (he in turn is making his girlfriends, count them..5, heart shaped lollipops to spread the love :p). I love the idea of these cookies, could you use butter if no shortening to hand?

    I Heart Valentine’s Day. But my hubby and I don’t buy all the ready made cards etc. We are dorks and make our own Valentines for each other… (sometimes it’s a bit more tedious trying to outdo his but it was my dumb idea to begin with, so tradition lives on. ) Oh I also love all the heart shaped candy & chocolates and all things pink …but on the 75% clearance after the big Hoorah. What?? I’m old and married with 2 little boys now, my days of buying super expensive , cute frilly things to impress my guy are gone…:O(
