Chicken and Gnocchi Soup

So listen.

I know what you’re thinking.


This soup looks kind of fancy.

It probably doesn’t help that I added a wooden tray and cloth napkin to my soup picture, which is obviously pretty serious business.

But please don’t run away.

It’s cool. I promise.

When Cheryl and Kristen announced that they were having Soup-A-Palooza, I immediately knew I wanted to join.  I mean…I love soup…..I love paloozas…..so of course I’m totally in.

And to be sure I was properly prepared, I looked up a-palooza on Urban Dictionary. It provided the following definition:

a-palooza   an all-out amazing party; when you go all out and just have the funnest time ever
At the palooza last night, I downed 19 beers.
Soooo….I’m here, with my soup…and 19 beers.
I’m ready to get my palooza on. 

We should probably eat soup first. Beer is very filling.

INGREDIENTS

3 chicken breasts, cooked and diced
4 cups chicken stock
2 cups heavy cream
2 garlic cloves, diced
1/2 diced onion
2 tablespoons olive oil
1/2 cup frozen chopped spinach, thawed and drained
1/2 teaspoon thyme
salt and pepper
For Gnocchi: (from allrecipes.com)
1 cup dry potato flakes
1 cup boiling water
1 egg, beaten
1 teaspoon salt
1/8 teaspoon all-purpose flour
1 cup flour

First prepare gnocchi:  
Place potato flakes in a medium bowl.  Pour in boiling water. Stir until blended. Let cool.
Stir in egg, salt, and pepper.  Blend in enough flour to make a fairly stiff dough.  Turn dough out onto a well-floured board. Knead lightly.Divide dough in half. Shape each half into a long, thin roll, the thickness of a breadstick. Cut into bite-sized pieces.

Place a few gnocchi at a time in a pot of boiling water. As they rise to the top, remove with a slotted spoon and set aside.


Heat the olive oil in a large pot over medium heat. Saute the onion and garlic until the onion is translucent.

Add chicken, chicken stock, cream, salt and pepper, and thyme. Heat to boiling, then add gnocchi. Gently boil for 4 minutes, then reduce heat and simmer for 10 minutes.

Add spinach, then simmer a minute more. Serve.
The original recipe called for frozen gnocchi, which my grocery store doesn’t carry. Feel free to use frozen if you prefer but the gnocchi recipe I used was easy and tasted great.

My husband is very picky, so I lied and told him that the spinach in the soup was parsley.  After he ate two bowls and said how great it was I was all, “haha…you ate SPINACH,” and he was all, “I KNEW it wasn’t parsley, you didn’t trick me,”.


He’s totally lying. He didn’t know. He just can’t handle being married to the world’s ultimate tricky person.

    I'm all about hiding food in food, especially vegetables. In our family if we can get all the nutrients without having to taste it, it's all good. :)

    This sounds really good. I had to ask The Chef what gnocchi is! You're exactly right… it does look kind of fancy. But I'm always "up" for something new and different, especially since The Chef is cooking, and I've never had gnocchi before!

    LOVE your blog. Haven't "we" all wanted to be Queen of "something"? LOL And I especially love your code of ethics. I might just have to plagiarize it (kidding, obviously).
