Dinner and Dessert: Pizza Rolls and Chocolate Chip Cookie Cheesecake Bars
My husband and I have an agreement that I will not write blog posts about him.
Actually, it’s less of an agreement and more of me begging and pleading and him saying “NO”, over and over.
And really, I don’t understand what his deal is. I mean, helloooo…it’s not like I ever make fun of people on here or anything.
Okay, maybe I do.
But if I made fun of my husband, it would only be in the sweetest and most fun-loving way possible.
Kind of like a, “Oh, look at these cute little quirks he has….isn’t that funny/and or a little annoying, let’s all have a good laugh at how amusing he is” type thing.
Hmmmmmm…..
Maybe that doesn’t sound too appealing after all.
But still–my husband is supposed to be my other half. So by forbidding me to blog about him, he is essentially allowing me to creatively express only half of myself.
For real.
And I’m not even going to get into what our Nation’s Forefather’s would say about him stifling my right to Freedom of Speech.
But I will say that good ol’ George Washington would probably not approve. And when a person’s face is on the same money that you use to buy pack after pack of breath mints, you should probably heed to his word.
Oh, did I just let it drop that my husband buys a lot of breath mints?
Oops. I guess now you know something about him.
My bad.
But just so you know, my husband totally doesn’t have bad breath. He’s just a minter. Like some people smoke or whatever.
He mints. That’s his habit.
Sometimes, when I want to show my husband that I love and care about him, I buy him a whole big stack of his favorite mints.
And then he says “Oh, thanks babe. You’re the sweetest and prettiest wife ever”.
And I say, “Hey, can I have one packet of those mints?”
And he says, “Uh…I don’t know if I can part with a whole PACK, but you can have A MINT”.
Okay, just kidding. He gives me a pack if I ask.
Unless it’s his last or next to last pack, in which case he is definitely not sharing.
Now that I think about it, my husband pretty much never tells me no to anything. Plus, he tells me I’m pretty and sweet and nice every day. And if I don’t feel like cooking dinner, he drives into town to get me a chili dog at Sonic and doesn’t even complain.
So, I guess I will honor his request and not blog about him.
Sigh.
And because I know that he will definitely be reading this in the next day or so because he is one of those super supportive husbands who thinks I am crazy talented and reads everything I write, here is a side note to my sweetie pie:
Dear Honey,
See? I am not writing about YOU. I am writing that I can’t blog about you. And that is really not the same thing at all. Also, will you please bring me home a bottle of wine and a foot long chili dog?
P.S. You don’t mind that I told about the mints, do you? Because I think it is a very admirable habit and if more people would pick it up the world would probably be a better place.

Also, my husband loves pizza rolls. But not cheesecake. So these homemade pizza rolls are for him, and the cheesecake is mine all mine.

Pizza Roll Ingredients:
Pie Crust (I used a package of Pillsbury pre-made crust. If you use both crusts you should get 20-22 pizza rolls.)
Pizza Sauce
Pepperoni
Shredded Mozzerella
Oil, for frying
In a large frying pan, heat some oil on medium. You want it to be about an inch deep. Gently unroll your pie crust on a lightly floured board.
Cut circles in the dough close together. I used a 3 inch round biscuit cutter.
Spread a small circle of pizza sauce on the crust and brush edge with water.
Top with a pepperoni and sprinkle with a little bit of cheese.
Fold that baby in half like a taco.
Seal it up with a fork. Isn’t it cute?
Fry until golden brown on both sides.
Drain your pizza rolls on paper towels. Break one in half so you can admire it.
Take a picture with your phone and send it to your friends. They will be super duper jealous.
And yes, pizza rolls can totally be a dinner. They are HOMEMADE, after all.
Just serve them with ranch and a salad (that will cancel out the fried pizza roll part), and maybe even some corn or something if you want to be extra healthy.

Chocolate Chip Cookie Cheesecake Bars:
16.5 oz roll of chocolate chip cookie dough
1 8 oz package cream cheese, softened
1/2 cup sugar
1 egg
1/2 teaspoon vanilla
(adapted from: Better Homes and Gardens Off the Shelf Baking )
Preheat oven to 350. Line an 8×8 pan with foil so that it hangs over the sides of the pan and spray well with nonstick spray. Cut your roll of cookie dough into four equal pieces.
Set one section of cookie dough aside. Press the rest of the cookie dough evenly into the pan.
In a medium mixing bowl, beat the cream cheese with an electric mixer on medium speed until smooth. Add sugar, egg, and vanilla, beating on low speed until smooth and well combined.
Spread the filling evenly over the cookie dough crust. Dot with the remaining portion of cookie dough.
Bake for 25-30 minutes or until top is light brown and filling is set. Cool completely before peeling off foil and cutting into bars.
Okay, so this is what you’re having for dinner and dessert, right? Because it took me a really long time to do all those pictures and everything.
Just say yes.

is it necessary to use the foil? with my luck, it won't come off and will remind me of the time i was on a blind date and a piece of foil stuck to my filling and date thought i was choking (because my eyes were buggin out and my brain could not direct my hands to reach in and remove it from said tooth) and tried to give me heimlich maneuver. there was no second date.

I love husbands! Especially their quirks and amazing ways of always giving us what we ask. Because I'm sorry, if hubby asked me for my chocolate covered gummy bears (my VICE) I would snarl and hiss at him…not that I've ever done that before. But everytime I ask him for something, even something he looooooves, like a bite of cheesecake…he'll give it to me.
Sigh. Sometimes I wish I were nicer and more about sharing. Then I see those chocolate covered gummy bears and remember that life is hard, I deserve the chocolate ;-)

We tried the pizza rolls tonight and although they were pretty easy we didn't care for them. At. All. The pie crust was weird.

AND cookie dough and cheesecake brownie things???? we don't have cookie dough here in NZ..(well we did for a couple years but haven't seen any at the supermarket…for a couple years!) we do everything from scratch down here! but i might just try it with my own dough…got a good american recipe I could use?? :)
