No Bake Brownies

So, I want a baby.

But I don’t want to have a baby, as in like, carry it for the longest nine months in all of eternity and then birth it.

And I don’t want to have a baby as in having it live with me and cry at night and spit up on my nice decorative couch pillows.

Plus, I have a lot of breakables and smell good candles and sharp knives in my kitchen and it took me a long time to get them all exactly where I want them and if I have to redo everything in order to accommodate a small baby child,  I am liable to go completely insane.


And also did I mention that I am one of those people who just totally has to have my sleep. 


“I’m worthless if I don’t get at least eight hours of Z’s”


Yeah, I’m one of the idiots that actually says that.

So as you can see, I’m in a bit of a dilemma here, because I want a baby, want a baby, want a baby. But not to have.

And I blame Aly&Ash’s blog.

She posted the most adorable picture of a tiny baby inside of a cute little knitted pea pod thing. And when I saw it, I almost died.


And I started wondering, why doesn’t everyone put their babies in a knitted pod? It’s cute, it makes people smile, and I bet it’s pretty dang cozy for babies because babies like being all wrapped up.


It’s a womb thing.

And then I started thinking about how when my son was a baby, my husband and I were too broke to get fancy pictures done so I ended up saving my pennies up and taking him to Sears.  The pictures came out okay and all, but they sure didn’t put my baby in a cozy knitted pod, or an old fashioned bucket or anything cool like that. 


So last night I told my husband that I needed to hurry up and start taking some cute pictures of  my son, ASAP, and did he think that if I made my son scrunch up really small, he could fit inside of a big flower pot. Maybe wearing some over sized gardening gloves. And my husband gently broke the news to me that cramming an almost six year old boy in a flowerpot probably constitutes as child abuse.


So basically, unless I am prepared to do prison time, I have totally missed the boat on the super cute and creative baby picture thing.

Another obsession of mine lately is this cookbook:

The Rocky Mountain Sweet Shoppe Cookbook
This certainly isn’t one of the cheapest cookbooks on Amazon, but it is soooo worth every penny. It has tons of recipes for candies, cookies, and bars, and everything looks so good it’s really hard to choose what to bake.
For today, because it’s been so dang hot outside, I chose the no bake brownies. And I get that you may be skeptical, I was at first too. How brownie-like can they taste? I can assure you that although they are not exactly typical, they are definitely a brownie. Crushed vanilla wafers soften to a cakey consistency that is just right.
INGREDIENTS
2 cups semisweet chocolate chips
12 oz can evaporated milk
3 cups vanilla wafer crumbs (crush the contents of an entire 12 oz box)
2 1/2 cups miniature marshmallows
1 cup sifted powdered sugar (Do NOT skip the sifting)
1/2 tsp salt
1 cup chopped cocktail or dry roasted peanuts
Line a 8 or 9 inch square pan with foil, leaving a 2 inch overhang on 2 sides. Generously grease with butter and set aside.
Combine chocolate chips and 1 1/4 cups evaporated milk in a microwavable bowl. Microwave on low power, stirring every 30 seconds chips are fully melted. Set melted chocolate mixture 
aside. 
In a large mixing bowl, combine vanilla wafer crumbs, marshmallows, powdered sugar, salt and peanuts. Stir until blended. Reserve 3/4 cup melted chocolate mixture for the top of brownies. Add remaining melted chocolate mixture to the crumb mixture. Stir until well combined. Using fingers, press evenly into bottom of prepared pan.
Add 1 teaspoon remaining evaporated milk to reserved melted chocolate mixture. Stir until smooth. Spread evenly over chocolate crumb mixture. Chill in pan 1 hour or until chocolate is set.
These brownies can be stored at room temperature for up to 3 days….do not freeze them.

    AAAAAaaahahahhahahah! I totally did not see that coming! Just reading along and all the sudden total blame on my shoulders! Bwhahaha! You're hilarious! Editing an 8 day old baby girl right now…prepare yourself in advance is all I can say! ;)

    In brownie news, I havn't tried these but there is a Rocky Mountain Sweet Shop in my mom's small town on Vancouver Island. (I'm headed there for while this summer…yum!) The fudge is to die for!

    This is a pretty crazy conundrum. Babies are adorable but so much work. But oh so adorable. No bake brownies, on the other hand, no conundrum there :)

    Oh dear…well perhaps you could find a very large flower pot? Surely they sell those…large enough for a 6 year old? Oh and these brownie bars look delish…wafers, mini marshmallows and peanuts? Oh yes please!

    I hear ya about the baby thing. I never thought I'd have an only child, but also never thought I'd end up a single mom at 36 either. I've actually enjoyed the unmarried life for 4 years, and I need my sleep too so maybe it's for the best. I've never heard of this cookbook. Thanks for sharing. I'm intrigued by the no bake brownie idea.
