Chocolate Chip Chocolate Bars
I’m keeping this post short today because I promised my kid that I’d take him out for doughnuts this morning.
And if there is one thing that is super important to me, it’s eating doughnuts.
Ummmmm….oops……I meant to say that if there is one thing that is important to me, it’s keeping my promises. Really….no Freudian slip here. What kind of mom would I be if I valued doughnuts more than promises?
Wait…..don’t answer that.
Anyways.
I want to take just a moment to talk to you about guilt.
Not mommy guilt.
Not “I like trashy television” guilt.
Not “I’d rather read US weekly than the newspaper” guilt.
Food guilt.
But not eating food guilt…..making food guilt.
There seems to be this belief that the longer it takes to prepare a dish, the better it should taste.
Not true.
Sometimes a cake from a mix tastes better than a homemade cake. Sometimes a Sara Lee pie is better than one you could have made yourself. Sometimes all you want is a slice and bake cookie.
And that’s okay.
If you love it, and more importantly, if your loved ones love it, that is all that matters. Because the whole point of dessert, the whole reason we spend so much time in the kitchen, is to put a smile on the face of someone we care about.
And if you achieve that, who cares how you got there?
These bars are the best of both worlds. Slightly homemade, slightly store bought, but completely delicious.

INGREDIENTS
1 (16.5 oz) roll refrigerated chocolate chip cookie dough
1 1/2 cups sugar
4 large eggs
3 tablespoons butter, softened
3 (1 oz) squares unsweetened chocolate, melted and cooled
Preheat oven to 350. Spray a 13×9 inch baking pan with nonstick cooking spray.
With floured hands, press cookie dough evenly into bottom of prepared pan. Bake for 6 minutes.
In a medium bowl, whisk together sugar and eggs until smooth. Whisk in softened butter. Add melted chocolate, whisking until combined. Pour mixture evenly over hot cookie crust. Bake for 18-23 minutes or until chocolate mixture is set in center. Let cool completely before serving.
These bars are quick, easy, and delicious. Enjoy!!

I’m a high school student and we do this thing where we bring in food for this class called “Team” which is basically a homeroom every Wednesday. Some kids who were in my Team last year and are again this year have been BEGGING for these. I’m making them tomorrow for Wednesday. Thanks for making me the one everyone always wants to bake =)
