Honey Bun Cake

Yesterday, I did the unthinkable.

I took my son to see Nick Jr. Live.

As I sat watching an adult size Dora dance around the painted wood background while fending off an adult sized Swiper (he wanted her music box), I recalled a time when I was naive enough to believe that things in cartoons reflected the way that things are in real life.

About 6 years ago.

You see, every now and then, I do something stupid. And when I do something stupid, I make it good. Which is great, if you are one of the bystanders lucky enough to witness such stupidity. Very, very bad though, for me.

I have told you that I am a southern housewife. I live just outside a tiny little town, on a little dirt road, across the street from a field of cows. Unlike my husband, I did not grow up in this type of environment, so I am very unskilled in most aspects of country living. I don’t know what to do if a cow is in my yard. So, I hide until it goes away. I am terrified of possums, and I would not eat squirrel stew if my life depended on it.

One day about 6 years ago, my husband mentioned that he had seen a roadrunner on our dirt road when he was on his way home. This kind of thing was new to me, so I was a bit surprised. You have to understand that in my mind, I was picturing the Roadrunner from my childhood cartoons. So, there I was…conjuring up images of a speedy bird about as tall as an ostrich, running down our road. I thought this sounded like a pretty big deal. My husband was really casual about it though, so I just kind of nodded. I figured they must be pretty common around here, and I didn’t want to look like a dork.

About a week later, my husband and I were headed to town, when he nodded towards the road in front of us. “There he is again,” he said. “Who? What are you talking about?” I asked. “The roadrunner,” he replied. 

I looked. And I saw an average size bird with legs a little longer than normal scurrying across the road. “THAT? That is a roadrunner?!”
“Sure,” my husband replied, “What did you expect?”.

With disappointment and embarrassment, I explained to my husband that I had been expecting the Roadrunner from my childhood cartoons. And of course, he laughed at me and asked if I also think that bunnies walk on two legs. I had to admit he had a good point.


That was one of those incidents that it takes a lifetime to live down. I don’t think my husband will ever get tired of coming home from work and telling me that he just saw a coyote with an Acme anvil standing at the end of our road. I don’t blame him.

I would probably do the same thing.

Last night I made one of my husband’s most favorite cakes of all time. I got the recipe from allrecipes.com several years ago, and I have made it many times since then. This cake is super easy to put together and I almost always have all the ingredients on hand. Because it is best warm, there is very little wait time after it comes out of the oven.


INGREDIENTS

1 package yellow cake mix
3/4 cup vegetable oil
4 eggs
1 cup sour cream
1 cup brown sugar
1 tablespoon cinnamon

Frosting:
2 cups powdered sugar
4 tablespoons milk
1 tablespoon vanilla

Preheat oven to 325. Butter a 9×13 pan.

In a large bowl, combine cake mix, oil, eggs and sour cream. Stir by hand, approximately 50 strokes or until all large lumps are gone. Pour 1/2 batter into pan. 

Combine brown sugar and cinnamon and sprinkle over batter. Spoon other half of batter over cinnamon sugar. Swirl cake with a knife so it looks like a honey bun.

Bake for about 40 minutes. Frost while cake is hot.


To make frosting:

Whisk powdered sugar, milk and vanilla until smooth.

This cake is a delicious dessert or even better for breakfast. Enjoy!!

    Ha ha – that exact same thing happened to me this year when my husband and I moved to a small rural town in Texas. He thought it was so hysterical when I said, “That’s not a roadrunner – that’s just some bird”

    The coffee cake is delicious and easy to make. Yum!
